CLAM NOODLE SOUP

Here is a simple noodle soup for clam lovers. Look for fresh littleneck clams. They are easy to handle and perfect for a noodle soup. As for the noodles, you can purchase Korean-style thick wheat noodles in the refrigerator section of any Korean grocery. Alternatively, you can try fettuccine or even rice noodles. The soup broth is unseasoned, so make sure to serve this dish with the topping sauce—and cabbage kimchi on the side is a must!

2¼ lb (1 kg) fresh littleneck clams

2 tbsp (36 g) salt

2 tbsp (30 ml) vinegar

10 cups (2.4 L) water

7 to 8 large dried anchovies, deveined, head removed

1 (6” [15-cm]) piece dried sea kelp

8 oz (225 g) Korean radish, diced

1 carrot, thinly sliced

1 zucchini, thinly sliced

1 medium russet potato, peeled and sliced

1.6 lb (750 g) fresh thick wheat noodles

SOY CHILI SAUCE

¼ cup (60 ml) soy sauce

2 tbsp (13 g) Korean chili flakes

1 fresh chile, minced (optional)

1 green onion, finely chopped

2 cloves garlic, finely minced

1 tbsp (15 ml) sesame oil

Freshly ground black pepper, to taste

Cabbage kimchi (here), for serving
